Nose: Overripe
banana skin, sherry steeped raisins, coffee soaked dates, cinnamon poached plums, Frank Coopers Oxford vintage marmalade, grilled pineapple rings and burnt caramel. Followed by a big wedge of Delia’s creole Christmas cake, gulab jamun (Indian dessert), smoked walnuts, a tease of five spice and oodles of opulently charred oak.
Palate: Treacle
drenched raisins, dates and sultanas, thick aged balsamic vinegar, salted caramel, baked plums, grilled peaches and clove studded oranges. Followed by sugared almonds, chocolate
covered coffee beans, five spice, anise, ground white pepper and wondrous waves
of wood spice.
Finish: A fabulously
full on, feisty and spicy lingering finish.
