Highlands-based Dalmore Distillery has announced the launch of a new expression in its core Principal Collection.
The Dalmore Aged 17 Years (42% ABV) is a single malt Scotch whisky initially matured in American white oak ex-Bourbon casks, before being finished in a combination of Amoroso, Apostoles and Matusalem Oloroso Sherry casks.
This latest release is said to showcase The Dalmore’s decades of expertise in sherry maturation, as well as its longstanding relationship with partner González Byass, from whom the distillery exclusively sources the trio of fine casks used for this 17-year-old expression.
Each cask contributes its own distinct characteristics, enriching the spirit. Apostoles brings structure, depth and savoury complexity, while Amoroso bridges savoury and sweet notes to deliver harmony and balance. Matusalem Oloroso adds weight, roundness and lingering sweetness.
On the nose, The Dalmore Aged 17 Years is said to offer notes of Seville orange, rich orchard fruits and wood spice, followed by flavours of poached pears, forest berries, sweet toffee and orange marmalade on the palate.
