The Spirit of Yorkshire Distillery has announced the launch of a new single cask release, available exclusively from The Whisky Shop.

Spirit of Yorkshire’s Filey Bay Single Cask #3521 (58.2% ABV) is a Yorkshire single malt whisky, matured in an ex-Pedro Ximénez Sherry cask. It was specially selected by Christopher Dunn, Manager of The Whisky Shop in York.

The collaboration is the result of a long-standing relationship between the distillery and the specialist retailer, where Spirit of Yorkshire’s Whisky Director, Joe Clark, once worked. Christopher spent a winter’s day in the distillery warehouse selecting the whisky from six casks put forward by the team.

This latest release from the field-to-bottle distillery—one of only a handful worldwide to use 100% homegrown barley in its single malt production—is described as: “rich, soft and spicy, with flavours of dried fruit, dark chocolate, caramel and toasted oak”.

Commenting on the cask selection, Christopher Dunn, said: “It was a fantastic day. I spent a lot of time with Joe, the whisky maker, discussing the business and the flavour profiles of each sample, carefully considering what customers and collectors look for in a single cask Filey Bay. There were at least three serious contenders among the casks I tried, all dangerously tasty and easy to drink, especially considering we were tasting at a chilly 5°C.”

“We ultimately chose a crowd-pleaser: a big, bold, fruity PX sherry cask influence that complements Spirit of Yorkshire’s bright, citrus character. It’s not just a sticky toffee pudding-style dram, but something more nuanced and tropical, with plenty of aromatic spice.”

Joe Clark, Spirit of Yorkshire Whisky Director, added: “The Whisky Shop has supported the whisky industry for decades by introducing people to the incredible world of whisky. Our single cask bottlings represent some of the rarest and most exceptional casks in our warehouse, and only a handful of these ex-Pedro Ximénez casks have ever been bottled.”

Limited to 294 bottles, Spirit of Yorkshire’s Filey Bay Single Cask #3521 is now available from 13 of The Whisky Shop’s 23 UK stores, including York, Leeds, Manchester and Newcastle, for a RRP of £125.00.
