The Leith-based Woven Whisky has announced the launch of a new limited-edition blended Scotch whisky, in collaboration with Ottolenghi, celebrating the opening of the brand’s first Scottish restaurant in Edinburgh.
Woven x Ottolenghi (47% ABV) is a blended Scotch whisky comprising: North British single grain 2016 (40.3%), Speyside blended malt Oloroso Cask (31.2%), undisclosed Speyside single malt matured in first-fill Oloroso casks from 2014 (10.6%) and 2022 (6.7%), Glenlossie single malt 2015 (5.8%) and Glen Elgin single malt 2014 (5.4%).
This latest release has been designed to complement the vibrant Mediterranean and Middle Eastern cooking for which Ottolenghi is renowned. The whisky is said to favour contrast over weight, layering brightness and texture to sit comfortably alongside food without overpowering it.
Ottolenghi bar manager Oren Coleman challenged Woven to approach the whisky in the same way the restaurant approaches food: with brightness, contrast and ingredients that each bring something distinctive to the final creation.
Drawing inspiration from Ottolenghi’s recipes, Woven explored familiar flavours, including preserved lemon, fennel and pink peppercorn. The resulting blend combines Edinburgh grain whisky for lift, Speyside malt for freshness and structure, and Oloroso-seasoned casks for sweetness and a fruit-forward profile.
Ottolenghi began in 2002 with a single shop in Notting Hill, founded by chefs Yotam Ottolenghi and Sami Tamimi. Together, they created a food shop, deli, restaurant and bakery – a place that defied a single description but was defined by a clear obsession with food.
From these roots emerged a distinctive style of cooking, grounded in Middle Eastern and Mediterranean traditions while embracing influences and ingredients from around the world. Since then, the brand has expanded across the UK and Europe, with multiple locations, including its first Scottish restaurant at 92 George Street, Edinburgh.
Commenting on the launch, Pete Allison, Co-Founder and Whisky Maker at Woven, said: “We love looking at whisky through the lens of different collaborators. The Ottolenghi team are every bit as passionate about flavour as you’d expect, but they put things together in a brilliant, playful way. We didn’t start the normal way – we sat down and talked about the ingredients they use every day and how those flavours could find a place in our whisky. It was joyous!”
Neil Campbell, Executive Chef at Ottolenghi, added: “We love working with local producers, and our first restaurant in Scotland is no exception. Tasting samples with Woven, we kept finding flavours from our own pantry. The result is an unusual profile: intentionally light, but full of vibrant flavour. This isn’t a whisky to save in the cabinet. It’s meant to be poured with dinner.”
Limited to 340 bottles, Woven x Ottolenghi is now available at Ottolenghi Edinburgh and across the brand’s licensed restaurants and delis. A limited allocation will also be available to purchase through the Ottolenghi and Woven websites, for a RRP of £60.00.
